Salmon Green Chile Soup Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 garlic cloves, sliced
  • 4 cups vegetable broth
  • ½ cup pearl couscous
  • 16 ounces skinless salmon fillets
  • 1 cup halved cherry tomatoes
  • Fresh cilantro, to taste
  • 1 jar of Pure Hatch Green Chile
  • 1 teaspoon of Hatch Green Chile Spice

Instructions:

1. Heat Oil

Heat the oil in a large saucepan over medium-high heat.

2. Add Dry Ingredients and Broth

Add the onion, garlic, salt, and Hatch Green Chile Spice, and cook. Stirring for 1 minute, then add the broth and bring to a boil.

3. Add Couscous and Salmon

Add the couscous; reduce heat to medium-low, and simmer for 5 minutes. Add the salmon, tomatoes, and green chile. Cook, stirring gently until the salmon is cooked through

4. Serve

Break the salmon into pieces and sprinkle with fresh cilantro. Serve and enjoy!
